  • 2 eggs
  • 3/4 cup unsalted butter, melted
  • 1/2 tsp instant coffee
  • 1/2 tsp almond extract

  • Place zucchini in sieve to drain while preparing remaining ingredients.
  • Step 2
  • Preheat oven to 350°F. Grease two 9x5 loaf pans.

  • In a large bowl, whisk together flour, cocoa, baking soda, salt, and cinnamon.
  • Step 4
  • In a separate bowl, beat together eggs and sugar until smooth. Add butter, coffee, and almond extract. Mix until well blended.

  • Mix the zucchini into the egg mixture. Add the flour one cup at a time, stirring in between additions.
  • Step 6
  • Devide the batter equally into the two loaf pans. Work quickly to avoid over leavening. Place in the oven, and bake for 50 minutes, or when a skewer inserted into the center comes out clean.

  • Let cool in the pan for 5 minutes, then alow to cool completely on a wire rack.
