  • 1 gallon Water
  • 1 1/2 cup Kosher salt
  • 3 cup Brown sugar
  • The rest
  • 1 10-12 lb. Turkey skinned and gutted.
  • 1 Apple wood smoke chips
  • 1 Mesquite smoke chips
