  • 1 cup brown sugar
  • 2 tsp baking soda

  • 1 cup vegetable oil
  • 2 cup shredded carrots
  • 3/4 cup chopped walnuts

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make classic carrot cake in your home by yourself.

    Step 1
  • preheat oven to 350°F.
  • Step 2
  • drain pineapple reseveing 2 tbsps of the juice. you may discard the rest or save for another use
  • Step 3
  • in a large bowl combine all dry ingredients.
  • Step 4
  • add eggs, oil, pineapple, carrots and reserved juice blend with a mixer on med speed until combined.
  • Step 5
  • stir in walnuts
  • Step 6
  • transfer to a greased and floured 13x9 baking dish or to 9 inch baking pans bake 35 to 40 minuted
  • Step 7
  • cool on wire racks leave in pan 10 minutes the remove if using the round pans
  • Step 8
  • I top this cake off with cream cheese frosting and then press more chopped walnut on the top.
