  • 2 cup jasmine rice
  • 3 1/2 cup coconut milk
  • 1 bunch cilantro; chopped
  • 1 lime
  • 1 pinch salt

    Step 1
  • Bring coconut milk to a simmer with a pinch of salt. Add rice. Cover. Cook approximately 8-9 minutes. Remove from heat. Leave covered 2 minutes. Uncover and dont touch for another two minutes. Fluff very briefly with a fork.
  • Step 2
  • Add cilantro. Zest the lime over the rice. Add lime juice. Fold together
  • Step 3
  • Garnish with toasted coconut if desired.
