Ingredients: Coconut Lemongrass Rice

  • 1 cup Jasmine Rice
  • 1 3/4 cup Water
  • 1/2 stalk Lemongrass
  • 1 cup Coconut milk
  • 1 tbsp Cilantro, fresh, julienne
  • 1 Lime
  • to taste Fine sea salt and freshly ground white pepper

How to Make Coconut Lemongrass Rice

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Coconut Lemongrass Rice in your home by yourself.

    Step 1
  • Place rice and water in saucepan.
  • Step 2
  • Cut stalk of lemongrass in half. Bruise the "meaty" bit with back of chef knife ir other blunt instrument. Add to pot with rice.
  • Step 3
  • Bring pot of rice to boil, reduce heat. Simmer 10 minutes.
  • Step 4
  • Remove from heat. Cover tightly and DO NOT uncover for an additional 10 minutes.
  • Step 5
  • Uncover rice. Remove lemongrass and discard.
  • Step 6
  • Add coconut milk and cilantro. Stir well.
  • Step 7
  • Add lime juice, sea salt and white pepper to taste.
