  • 1 cup Graham crackers crumbs
  • 1/2 cup Coconut flakes
  • 1/4 cup melted butter
  • 1 tbsp brown sugar
  • Filling
  • 1 lb Mascarpone cheese
  • 1 can Sweetened condensed milk
  • 4 each Eggs
  • 1 tsp Vanilla extract
  • 1 tbsp Fresh lemon juice
  • 1/2 cup Milk
  • 1 cup Coconut flakes

How to Make Coconut Mascarpone Cheese Cake

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make Coconut Mascarpone Cheese Cake in your home by yourself.

    Step 1
  • Preheat oven to 200ºC/ 400ºF.
  • Step 2
  • Mix together all crust ingredients, then press them on an 8-inch spring form pan, which has been lined with aluminium foil or baking sheet.
  • Step 3
  • Place in oven for 10 mins and let it cool.
  • Step 4
  • In the meantime, beat with an electric whisk the mascarpone cheese until it is soft and smooth, then add the sweetened condensed milk and mix well.
  • Step 5
  • Add the eggs one at a time until well incorporated. Then add the vanilla extract, the milk and lemon juice and mix well.
  • Step 6
  • Gently fold the coconut flakes with a spatula.
  • Step 7
  • Pour the mixture over the crust and bake for an hour on 150ºC/300ºF.
  • Step 8
  • Let it cool for an hour then place in the fridge, possibly overnight. ENJOY!
