  • 15 grams Koshi-an

  • 1/2 tsp Instant coffee
  • 1 dash Cinnamon
  • 1 tsp Strawberry powder
  • 1/2 tbsp Sugar (or caster sugar)

    Step 1
  • Divide the shiro-an into 4 portions that's 15 g each.
  • Step 2
  • Mix each portion of the shiro-an with the 5 flavored powders.
  • Step 3
  • Do not dissolve the instant coffee in water, but add it directly into the shiro-an. Once mixed, add the cinnamon.
  • Step 4
  • Roll each portion up into a ball. If they are too damp, pat dry any excess water with a paper towel.
  • Step 5
  • Put 50 ml water and powdered kanten into a heatproof container and mix.
  • Step 6
  • Microwave for 40 seconds.
  • Step 7
  • Take it out, mix, and add the sugar.
  • Step 8
  • Microwave for another 20 seconds.
  • Step 9
  • Mix well and remove any bubbles.
  • Step 10
  • Put the anko onto the tip of a thin stick. Scoop the kanten mixture with a spoon, and pour over the anko balls.
  • Step 11
  • Let the anko balls cool on a sheet of paper towel to finish.
