  • 5 beets (beetroot)
  • 6 sweet potatoes
  • 4 medium sweet peppers of varying colour
  • 2 sprigs parsley
  • 4 stick carrots
  • 1 stick kale
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 can sweet corn (i used Green giant)
  • 1 can cream style corn
  • 1 box evaporated milk
  • 3 tbsp soft table margarine/butter (low fat)
  • 1/2 cup crumbled feta cheese
  • 2 cup grated cheddar cheese

How to Make Corn pie a la carte

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Corn pie a la carte in your home by yourself.

    Step 1
  • Bring sweet potatoes and beets to a boil.
  • Step 2
  • Slice sweet peppers lengthways. Finely chop parsley.
  • Step 3
  • Grate carrots and put aside in a bowl.
  • Step 4
  • Cut beets into squares of medium to small sizes but not large. Crush sweet potatoes and place both in a large bowl.
  • Step 5
  • Chop up kale as finely as you can. Ensure not to add the stalk.
  • Step 6
  • Mix all dry ingredients in a bowl adding the salt and black pepper to taste.
  • Step 7
  • Add sweet corn and cream style corn to bowl and mix.
  • Step 8
  • In greased dish add approximately half of mixture. Then add a layer of cheddar cheese and add all of the feta cheese.
  • Step 9
  • Add remainder of mixture and layer top with cheddar cheese. Bake at 190°C for 30-45minutes. Enjoy! :)
