  • 1/4 cup flour
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp dried thyme
  • 2 tbsp butter
  • 8 chicken thighs
  • 4 slice crisp bacon
  • 1/2 onion cut into small strips
  • 1 bell pepper cut into small strips
  • 2 ribs of celery
  • 1 tbsp fresh minced garlic
  • 1 tbsp tony chachere's seasoning
  • 1 28 ounce can of pettite diced tomatoes with juices
  • 1 cup white rice

How to Make Country Captain

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make Country Captain in your home by yourself.

    Step 1
  • combine flour, salt & pepper and thyme in bowl.
  • Step 2
  • in large skillet, melt butter over medium heat.
  • Step 3
  • dredge chicken in flour mixture on all sides and brown in skillet. set aside chicken and leave 1 tbls fat in skillet.
  • Step 4
  • cook bacon in the skillet until crispy. crumble and save for topping.
  • Step 5
  • add onion, bell pepper, celery, garlic, and tony's seasoning to skillet and saute for 7 minutes.
  • Step 6
  • stir in tomatoes and juices, bring to a boil the turn down and simmer for 10 minutes.
  • Step 7
  • season with salt and pepper and add chicken thighs back to mixture. let simmer, covered, for 45 minutes.
  • Step 8
  • serve over white rice and sprinkle crumbled bacon over the top.
