  • 1/2 pound fresh green beans (about 2 cups or 250 g)
  • 4 small potatoes
  • 1/2 medium onion
  • 2-4 slices bacon, add more or less depending on how much meat you like
  • Pepper, to taste
  • 1/2 tsp salt, plus more to taste

    Step 1
  • Cut or snap the little stems off the green beans and cut them into thirds. Cut larger potatoes in half, chop the onion and roughly chop the bacon.
  • Step 2
  • Heat a little bit of oil in a pot and sauté the bacon on medium heat until it starts to brown, about 4-5 minutes.
  • Step 3
  • Add the onion and cook until soft, about another 5 minutes.
  • Step 4
  • Add beans and potatoes to the pot. Sprinkle in a little pepper and 1/2 tsp salt
  • Step 5
  • Add enough water to just cover the vegetables. Bring to a boil. Lower the heat to a simmer and cover the pot. Simmer on low for about 1 hour.
  • Step 6
  • Stir occasionally and add a little water if it gets too low. After 1 hour, the beans should be very tender. Add extra salt and pepper to taste.
