  • 60 grams cream cheese (softened)
  • 1 tsp grated lemon rind
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/2 cup self-raising flour
  • 5 tbsp plain flour
  • 1/2 cup cranberries (frozen/dry)
  • 1 confectioner's sugar

    Step 1
  • Preheat oven to 180C/350F. Grease a 15x21 loaf pan. Beat butter, cream cheese, lemon rind and sugar till light and fluffy.

  • Add in egg, continue mixing till well combined. Stir in flours. Fold in cranberries. Spoon in mixture into prepared tin pan.
  • Step 3
  • Bake for an hour, or until tester comes out clean. Stand cake till cool, dust with confectioner's sugar.
