  • 1 large eggplant, aubergine
  • 14 oz coconut milk
  • 1 large onion, chopped
  • 1 tbsp tomato paste
  • 1/2 tsp curry powder
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1 tsp minced garlic
  • 1 stick butter
