  • 4 boneless, skinless chicken breasts
  • 1 14oz can artichokes drained and chopped
  • 2 tbsp butter
  • 1 small onion chopped
  • 2 clove garlic chopped
  • 1 packages dry zesty Italian dressing mix (Good Seasons brand)
  • 16 cherry tomatoes chopped (each one cut into 4 pieces)
  • 1/2 cup chicken stock
  • 8 oz cream cheese
  • 5 oz fresh spinach
  • 1/4 tsp black pepper
  • 8 oz shredded mozzarella cheese

How to Make Creamy Italian Chicken

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Creamy Italian Chicken in your home by yourself.

    Step 1
  • Preheat oven to 350°
  • Step 2
  • Melt butter and a splash of olive oil in a sauté pan. Add chopped onion. Saute until soft. Add garlic and sauté for another minute.
  • Step 3
  • Soften cream cheese in microwave on low setting. Once it's nice and soft whisk in chicken stock and mix together. Add spinach, artichokes, tomatoes, italian dressing mix and black pepper. Then stir in the onions and garlic.
  • Step 4
  • Spray casserole dish with cooking spray. Place chicken in dish. Pour cream cheese mixture on top. Cook for 30 min. or until chicken is cooked through.
  • Step 5
  • Sprinkle mozzarella on top and put under broiler until cheese is melted.
