  • 2 large baker potatoes, russet
  • 4 tsp olive oil, divided
  • 1/2 tsp garlic powder
  • 1/2 tsp parsley
  • 1 salt and pepper to taste

    Step 1
  • In microwave, cook cleaned , skin on potatoes until tender. You may bake them in the oven until tender. Times depend on potato size.
  • Step 2
  • Once potato is cool to touch, cut medallion slices 1/2" thick.
  • Step 3
  • In hot skillet on just below medium heat add 2 teaspoons oil.
  • Step 4
  • Add in potato slices and leave unturned until bottom gets crispy and golden. About 10 minutes.
  • Step 5
  • Drizzle next 2 teaspoons of oil on top of potatoes along with salt, pepper and garlic powder and parsley
  • Step 6
  • Flip and cook until crisp on second side.
  • Step 7
  • Serve with your favorite breakfast or as a different potato side with hamburgers or chicken!
