  • 1 1/2 cup rice

  • 1 each jalapeno, seeded and chopped
  • 3 clove garlic, minced
  • 1 tsp salt
  • 2 can black beans
  • 1 tbsp lime juice
  • 2 tsp cumin

    Step 1
  • In large pot, add broth cumin, and salt. Add rice. Cook until most if water has evaporated, then cover and reduce heat.

  • Sautee onions, garlic, and jalepeno in small pan until tender. Add to broth.

  • In separate pot, heat black beans and lime juice.
  • Step 4
  • Top with sour cream and green onions if desired.
