Ingredients: Curried red lentil & lime soup

  • 1 tbsp Hot Curry Paste
  • 1 onion
  • 2 clove Garlic
  • 4 cm Root Ginger
  • 1 tsp Cumin seeds
  • 200 grams Red lentils
  • 1500 ml Vegetable Stock
  • 50 grams Sultanas
  • 1 Lime
  • 150 grams Fat free yoghurt
  • 2 tbsp Fresh mint

How to Make Curried red lentil & lime soup

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Curried red lentil & lime soup in your home by yourself.

    Step 1
  • Finely chop the onion, garlic and ginger. Add these into a hot pan with some oil along with the Curry paste and cumin seeds. Cook gently for 3-4 minutes.
  • Step 2
  • Add the lentils into the pan and all of the stock to the pan, bring to the boil and simmer gently for 20 minutes.
  • Step 3
  • Add the sultanas and cook for a further 10 minutes, Then squeeze in the juice of half a lime (use more if you prefer).
  • Step 4
  • serve into bowls and you each with a large spoonful of yogurt and a sprinkling of mint. You can serve with warm chapattis
