    Step 1
  • A wire rack to elevate the steak is absolutely essential for this recipe. It will allow air flow to circulate around the meat.
  • Step 2
  • The first thing is to pat the steaks and dry as possible. Place the wire rack on top of a baking pan.
  • Step 3
  • Then wrapped in a single layer of paper towels and place on the wire rack. Then place the coldest part of your refrigerator (usually the bottom) and leave for 24 hours.
  • Step 4
  • After 24 hours remove the paper towels and wrap with fresh paper towels (a single layer).
  • Step 5
  • Return to the refrigerator and let dry for 2 or 3 days (3 days would be better).
  • Step 6
  • If you wish to add a dry rub or seasoning before cooking you want to add an extra generous amount and let season for 24 hours with a paper towel draped over the entire pan.
  • Step 7
  • Because of the dryness of the steak the absorption of seasonings will be much slower then a fresh bought steak.
  • Step 8
  • A marinade will work fine on the steaks as well.
  • Step 9
  • You can cook the steak anyway you like using your favorite method. I prefer cooking mine on the grill.
