  • 1 small Apple

  • Make the apple filling. First, dice the apple into 5 mm.

  • Poke several holes in the other 2 pieces with a fork. If you have a pastry sheet that already has holes in it you can omit this step.

  • Cut and poke the other pastry sheet in the same way. You'll have 4 pieces with slits and 4 pieces with holes.
  • Step 10
  • Put a generous mound of apple filling on the 4 pieces without the slits, leaving about a 5 mm gap around the edges.
  • Step 11
  • Top with the pastry pieces with the slits, and crimp the edges with a fork.
  • Step 12
  • Line a baking pan with parchment paper, place the pies on top, brush the tops with egg yolk, and bake for 10 minutes in a 410°F/210°C oven.

  • Lower the temperature to 360°F/180°C after 10 minutes, bake for a further 15 minutes and serve!!
