  • 1 tsp cumin seed
  • 1 tsp coriander seed
  • 1 tsp black pepper
  • 1 half teaspoon salt
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 lemon
  • 2 clove garlic
  • 1 thumb size fresh ginger
  • 1 green chilli
  • 2 red chillis
  • 1 handful fresh coriander
  • 4 skinless and boneless chicken thighs
  • 1 handful red lentils
  • 1 half tin coconut milk
  • 1 olive / sunflower oil
  • 1 chopped onion

How to Make Easy chicken curry

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Easy chicken curry in your home by yourself.

    Step 1
  • place garlic cloves, fresh ginger, chillis, slug of oil, zest of lemon and half lemon juice in a bowl and blend with hand held blender or similar
  • Step 2
  • Add all dry spices (except cumin and coriander seed). Mix well. This is the basic curry paste and can be made in advance and stored in the fridge.
  • Step 3
  • Heat a large frying pan and toast the cumin and coriander seed. Add the curry paste, a slug of oil and the chopped onion. Simmer for 5 minutes.
  • Step 4
  • dice the chicken and add it to the pan. Cook for further 5 minutes untill chicken sealed on all sides.
  • Step 5
  • Add 1 pint of water and the lentils. Simmer for 30-45 minutes with occasional stirring.
  • Step 6
  • Add the coconut milk and stir it in, add the fresh coriander at the last minute, leaving some for garnish at the time of serving.
