  • Rinse the baby lima beans and soak in water in a big pot overnight. They double in size.

  • Bring to a boil over a high heat. Add water and bring back to a boil. Drain in a colander and discard the water.

  • Return the beans to the pot and cover with fresh water. Simmer over low heat slowly until the beans lose their shape.

  • After the sugar dissolves, add the rest of the sugar. Scrape the bottom of the pan and stir constantly until thick and shiny.

  • When you scoop with a spatula, drop it, and the paste stands, remove from heat.
  • Step 11
  • Put the bean paste into an air-tight container or resealable bag to chill or freeze.
