  • 1 Bell pepper, diced large
  • 4 garlic cloves, roughly chopped
  • 1 1/3 cup mushrooms, sliced thick
  • bunch parsley, chopped (for garnish)
  • 1 onion, chopped
  • salt and pepper
  • 1 1/4 tsp dried basil

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Easy Potato & Veggie Skillet in your home by yourself.

    Step 1
  • Heat bacon fat (or oil) in cast iron skillet. Add your onion and garlic, sautee until translucent.
  • Step 2
  • Add your mushrooms, cook for 3 min.
  • Step 3
  • Add your potatoes, and cook for 5 min on medium-high. Season with salt and pepper and basil.
  • Step 4
  • Turn the heat down to medium-low, add your diced peppers and let cook on medium-low for about 30 min.
  • Step 5
  • Stir occasionally until potatoes are cooked through and mushrooms are deep brown.
  • Step 6
  • Add chopped parsley and serve.
