  • 1 32 oz can diced tomatoes
  • 1 yellow onion
  • 1 1/2 tbsp vegetable oil

  • Heat oil in sauce pot. Add onions and sweat until translucent. Add tomatoes and rice. Add salt and pepper. Stir. Cook 30 seconds

  • Remove from heat. Leave covered to steam 5-10 minutes. Fluff
