  • 1 cup stuffing (leftover or Stove Top instant)
  • 6 large eggs, beaten and seasoned w/ salt & pepper
  • 1/2 cup ham, diced
  • 1/3 cup cheese, shredded
  • scallions, finely chopped (optional)

How to Make Egg "Muffins"

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Egg "Muffins" in your home by yourself.

    Step 1
  • Spray mini muffin pan with non-stick spray. Preheat oven to 350.
  • Step 2
  • Using large spoon or small rubber spatula scoop stuffing into bottom of each muffin cup, pressing down to form the bottom of each "muffin".
  • Step 3
  • Divide eggs into each muffin cup and top with ham (or other protein) and shredded cheese.
  • Step 4
  • Bake 6-8 minutes or til cheese is melted and eggs have fully cooked. Tops should be a bit browned. Top with scallions if desired. Serve warm.
