Prepare the ingredients before making Encherito's in your home. Then, follow these steps below to serve Encherito's for your family or friends.

Ingredients: Encherito's

  • 12 large tortillas
  • 2 lb ground beef
  • 4 1/2 tbsp chili power
  • 1 large onion (I like the purple for this)
  • 2 tbsp minced garlic
  • 1 can ro-tel
  • 1 large can of Wolf brand chili, or left over home made
  • 1 salt/pepper to taste
  • 1 bell pepper
  • 1 packages 3 cheese Mexican blend

How to Make Encherito's

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Encherito's in your home by yourself.

    Step 1
  • In a skillet brown beef. Half way through cooking add diced onions, bell pepper, seasonings, garlic, and ro-tel.
  • Step 2
  • Once fully cooked spoon meat mixture into tortillas, roll them up enchilada style and lay out in casserole dish.
  • Step 3
  • Once all are laid out cover them with chili, and cook for 15 minutes in the oven at 350°F.
  • Step 4
  • Add cheese to top and cook another 5 minutes.
  • Step 5
  • I call these encherito's because it's not quite a burrito, and not quite an enchilada.
