  • 2 lb ground beef
  • 1 onion, chopped
  • 2 (8 oz.) cans tomato sauce
  • 1 can Mexicorn, drained
  • 1 can (10 oz.) enchilada sauce
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 12 (5") corn tortillas, divided
  • 2 cups (8 oz.) shredded cheddar cheese, divided

How to Make Enchilada Casserole

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Enchilada Casserole in your home by yourself.

    Step 1
  • Cook beef and onion until done. Drain fat.
  • Step 2
  • Preheat oven to 375°. Stir tomato sauce and next 6 ingredients into meat mixture. Bring to a boil stirring occasionally.
  • Step 3
  • Place half of the tortillas in bottom of a greased 9 x 13" baking dish. Spoon half of the beef mixture over tortillas, sprinkle with 1 cup cheese. Repeat layers.
  • Step 4
  • Bake 15 minutes. Serve with sour cream.
