  • 1/2 cup salsa
  • 2 tbsp tomato paste
  • 6 peppers, small red, yellow, or orange
  • 2 tsp minced garlic
  • 2 cup cheddar cheese, grated
  • 1/2 cup greek yogurt (i.e. sour cream)
  • 1 1/2 cup rice (optional)
  • 1 pinch spices

    Step 1
  • cook beef, chorizo and onion together.

  • drain

  • add garlic, tomato paste, salsa, seasonings.

  • Assemble: pour enchilada sauce in bottom of 12X9 " baking dish.

  • Assemble: Pour remaining enchilada sauce on tortillas, sprinkle with grated cheese.
  • Step 9
  • Bake at 350 to 375°F until hot and bubbly.
