  • 1 tbsp oil
  • 1 medium onion, diced
  • 2 clove garlic, sliced
  • 1 tsp thyme, dried

  • 1 apple cider vinegar
  • 1 salt
  • 1 pepper

    Step 1
  • Preheat oven to 350°F
  • Step 2
  • Cut squash in half. Scoop out and discard seeds.
  • Step 3
  • Place squash on a baking tray, cut-side down. Bake until tender (35-45 minutes).

  • Adding broth to desired consistency, blend on high speed for about 45-60 seconds or until smooth.
  • Step 9
  • Pour into a soup pot and heat gently, stirring often.
  • Step 10
  • Add apple cider vinegar, salt and pepper to taste.
  • Step 11
  • Garnish and serve.
