  • 125 grams plain / all purpose flour
  • 175 grams cornmeal/polenta (yellow)
  • 2 tsp baking powder
  • 1 tbsp granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp vanilla extract
  • 1 oil to deep fry

How to Make Festivals

If you have prepared the ingredients needed, now time to start cooking. There are 9 steps you must follow to make Festivals in your home by yourself.

  • Mix all dry ingredients together

  • Add vanilla and sufficient cold water to make firm dough
  • Step 3
  • Knead and divide into 8 pieces
  • Step 4
  • Form each piece into an elongated barrel/ sausage shape using your hands
  • Step 5
  • Heat oil in deep pan / wok to approximately 190c
  • Step 6
  • Fry festivals 4 at a time until golden brown (about 5-6 minutes)
  • Step 7
  • Drain and place on kitchen paper to soak up oil
  • Step 8
  • Serve. Goes well with jerk chicken or any Carribean dish
  • Step 9
  • You can use demerara sugar instead of white. Cornmeal can be fine,medium or coarse, just alters the "mouthfeel"
