  • 150 g cashew nuts
  • 2 mandarines
  • 6 sausages
  • 100 g bacon
  • 1 sprig fresh rosemary
  • 1 tsp. tarragon
  • 2 salad onions
  • 1 stick celery
  • 1 pinch grated nutmeg
  • 2 cups breadcrumbs
  • 500 ml cider
  • to taste salt and pepper

    Step 1
  • Get all the ingredients together
  • Step 2
  • Shred the bacon, celery and onion in a food processor. Put in a large pan over a low heat for 10 minutes, stirring now and again to prevent sticking

  • Add the cranberries, herbs and cider. Turn the heat up and when it starts to simmer, leave at moderate until the liquid has reduced by half
  • Step 4
  • Roughly chop the cashew nuts, extract the sausage meat and discard the skins and put in a bowl with the breadcrumbs

  • Squeeze the juice from one mandarine and add to the bowl together with the segments of the other mandarine
  • Step 6
  • Once the liquid has reduced like this, turn the heat off
  • Step 7
  • Add the pan's contents to the bowl and mix well
  • Step 8
  • Store in the fridge or freezer in an airtight container
  • Step 9
  • Or, if you are ready to cook your turkey, start stuffing right away :-)
