  • 1 kg tuna jaw, cut into cubes
  • 1 1/2 cup soy sauce
  • 1/4 cup vinegar
  • 3 tbsp oyster sauce
  • 1 medium garlic, minced
  • 1 medium onion, chopped
  • 2 piece bay leaf
  • 1 pinch black pepper
  • 1 cup water
  • 3 tbsp sugar

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make Filipino Tuna Panga (Jaw) Adobo in your home by yourself.

    Step 1
  • Saute the garlic and onion for 5 minutes in a deep pan.
  • Step 2
  • Add the cut up tuna jaw. Saute for 15 minutes or until the tuna is medium cooked.
  • Step 3
  • Add oyster sauce. Mix well with the tuna, ensuring each gets coated.
  • Step 4
  • Add soy sauce and water. Add bay leaf and pepper.
  • Step 5
  • Simmer in low heat for 15 minutes.

  • Add vinegar and sugar. Simmer for 5 more minutes.
  • Step 7
  • Do a taste test. Note that adobo has so many varieties, depending on the preference of the cook. (My husband has a different mixture compared to mine) If it's too flavorful for you, add a little bit more water. If it's too salty for your taste, add more water or vinegar. If you think it's a dull combination of salty and sour, add a tablespoon of sugar. Remember, the trick to a perfect adobo is a balanced flavor of sweet, sour and salty. You may add some chillis if you want it spicy.

  • Serve hot over rice.
