  • 1 cup almonds, toasted and finely ground
  • 2 2/3 cup flour
  • 1 cup sugar
  • 1 cup plus 2 tablespoons unsalted butter
  • 1 tsp grated lemon peel
  • 1 pinch of salt
  • 2 tbsp lemon juice
  • 1 tbsp brandy or amaretto

How to Make Fregolotti

    Step 1
  • Mix nuts, flour, and sugar.
  • Step 2
  • Using a pastry blender, work in the butter until the mixture forms uniform crumbs.
  • Step 3
  • Sprinkle lemon juice and amaretto or brandy over mixture and toss together lightly with a fork until blended.
  • Step 4
  • Mixture should be crumbly.
  • Step 5
  • Lightly spread mixture into a buttered and floured 12 inch round pan with 1 inch high sides.
  • Step 6
  • Do NOT press into the pan.
  • Step 7
  • Bake at 350°F until browned, 50 to 60 minutes.
  • Step 8
  • Let cool on a rack.
  • Step 9
  • Break into chunks before eating.
