  • 1 kg small potatoes
  • 2 tbsp dry white wine
  • 2 tbsp chicken stock
  • 3 tbsp Champagne vinegar
  • 1 tsp Dijon mustard
  • 2 tsp kosher salt
  • 1 tsp freshly ground pepper
  • 10 tbsp olive oil
  • 1/4 cup minced scallions
  • 2 tbsp minced fresh dill
  • 2 tbsp flat-leaf parsley
  • 2 tbsp julienned fresh basil leaves

How to Make French Potato Salad

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make French Potato Salad in your home by yourself.

    Step 1
  • Drop potatoes into boiling salted water and cook for 20-30 minutes, until cooked through
  • Step 2
  • Drain in colander and place a towel over the potatoes to allow to steam for 10 more minutes.
  • Step 3
  • As soon as you can handle them, cut in half (or quarters if too big) and place them in a bowl.
  • Step 4
  • Toss with white wine and chicken stock. Allow the liquids to soak into the warm potatoes before proceeding.
  • Step 5
  • Combine the vinegar, mustard, 1/2 tsp salt, 1/4 tsp pepper and whisk in olive oil to make an emulsion.
  • Step 6
  • Add the vinaigrette to the potatoes.
  • Step 7
  • Add the scallions, dill, parsley, basil and the rest of salt and pepper and toss.
  • Step 8
  • Serve warm or at room temperature.
