  • 3 tbsp olive oil
  • salt and pepper

  • Wash potatoes,cut into 1 cm dice, rinse
  • Step 2
  • Place in saucepan , barely cover with cold water.

  • Bring to boil, then simmer for 5 minutes, you don't want to cook through, just soften, drain.

  • Put the olive oil In a wok or frying pan over medium heat.
  • Step 5
  • Add potatoes and season with salt and pepper
  • Step 6
  • Fry over medium heat until golden and cooked through.turning regularly.
  • Step 7
  • Serve. Goes with meatloaf, bacon pudding ,toad in the hole etc.
  • Step 8
  • You can use chilli or garlic oil to fry , add chopped bacon or ham or chopped fried onion (or cheat and use crispy salad onions added just before serving)
