  • 2 tbsp unsalted butter
  • 4 oz sweet italian sausage
  • 4 oz lean ground veal
  • 1/2 cup dry white wine
  • 1/2 cup chicken stock
  • 1 cup bread crumbs
  • 2 large eggs
  • 1 tbsp parsley
  • 1/2 tsp salt
  • 1 pepper
  • 30 large pitted green olives *
  • 2 cup flour
  • 1 canola or olive oil

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make fried stuffed green olives in your home by yourself.

    Step 1
  • *use pimento stuffed olives if you have to, just remove pimentos
  • Step 2
  • melt butter in skillet. combine meats and brown.
  • Step 3
  • add wine and cook until evaporated. add stock. simmer about 5 minutes until reduced and soft. cool for 5 minutes.
  • Step 4
  • in food processer, add meat, 2 tablespoons breadcrumbs, 1 egg, parsley, salt and pepper. pulse until a coarse paste.
  • Step 5
  • rinse and dry olives. using a small spoon, pastry bag or ziplock bag with the corner clipped, fill each olive. don't overfill.
  • Step 6
  • dredge olives in flour, dip in egg beaten with water and roll in crumbs. saute in oil until golden brown (about 10 mins).
  • Step 7
  • drain on paper towel and serve hot.
