  • 4 medium Red or white waxy potatoes, cleaned and peeled ( if you want them peeled)
  • 1 tbsp Diced garlic
  • 1/2 tbsp salt ( I used regular table salt)
  • water
  • 1 tbsp Extra virgin olive oil
  • 1 tbsp coarse grain salt
  • 1/2 tsp ground black pepper
  • 1/3 cup chopped parsley

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Garlicky parsley red potatoes in your home by yourself.

    Step 1
  • In a medium saucepan, place garlic, 1tbls salt, potatoes, and enough cool water to cover.
  • Step 2
  • Bring to a boil. Boil potatoes till they are just folk tender. Preheat oven to 450°F
  • Step 3
  • Remove potatoes from water. do not discard remaining water, but do remove from heat
  • Step 4
  • Place potatoes on a baking sheet tossed with 1-2 tablespoon olive oil. sprinkle with coarse salt and pepper
  • Step 5
  • Place in hot oven to toast and brown a bit. Approximately 20 to 25 minutes depending on your oven.
  • Step 6
  • Remove from oven and sprinkle with parsley. Serve
  • Step 7
  • I saved my water from the potatoes to to steam green beans and sweet peppers
