  • 1 lb fresh green beans, cleaned, trimmed, and cut into 1" pieces
  • 1/2 c walnuts, lightly toasted
  • 1/2 c Gorgonzola cheese, crumbled
  • 3 scallions, thinly sliced, white and pale green only
  • 3 tbsp Basic Salad Dressing

    Step 1
  • Bring a large pot of lightly salted water to a boil. Add the green beans, cover and as soon as the water returns to a boil drain the beans into a colander. Set aside to cool. At this point, you could refrigerate the beans in a covered dish until you are ready to finish the salad.
