  • 2 boneless, skinless chicken breasts (cooked & shredded)
  • 1 tbsp oil
  • 2 can (10 oz) green chile sauce
  • 1 can (4 oz) diced green chiles
  • 1/4 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp oregano
  • 1 (8 oz) block Monterey Jack (shredded) 6-8 flour tortillas (approx 7" diameter)

How to Make Green Chile Chicken Enchiladas

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make Green Chile Chicken Enchiladas in your home by yourself.

    Step 1
  • Preheat oven to 350
  • Step 2
  • In large skillet, heat oil on medium heat. Add chicken, seasonings, chiles and 1/2 of a can of chile sauce. Stir.

  • Once mixture is warm, stir in 1/2 of the cheese
  • Step 4
  • Lightly grease a 9x13 baking dish & spread 1/2 can of chile sauce on bottom of pan
  • Step 5
  • Place large spoonfuls of chicken mixture in tortillas, roll and place in baking dish seam side down
  • Step 6
  • Pour remaining sauce (1 can) over tortillas
  • Step 7
  • Cover enchiladas with remaining cheese
  • Step 8
  • Bake for 15-20 minutes
