  • 2 lb chicken breasts
  • 1 bunch cilantro, finely chopped
  • 2 large onions, chopped, separated
  • 1 head garlic, peeled and chopped
  • 2 tbsp apple cider vinegar
  • 1 tbsp cumin powder
  • 1 tbsp honey
  • 2 tsp kosher salt
  • 1 tbsp Black pepper
  • 1 lb tomatillos or tomato, diced
  • 2 can diced green chiles
  • 1 can diced jalapeños

If you have prepared the ingredients needed, now time to start cooking. There are 7 steps you must follow to make Green Chile Chicken Stew in your home by yourself.

    Step 1
  • preheat oven to 350
  • Step 2
  • combine first 9 ingredients (only one onion) in a medium pot. cover ingredients with water and stir. bring to simmer over medium heat. cook for 25 minutes.
  • Step 3
  • remove chicken and shred into bite sized pieces. set aside broth.
  • Step 4
  • meanwhile combine tomatillos or tomato, chiles, and peppers into a single layer on a rimmed baking sheet. Stirring occasionally, roast in oven for 20 minutes.
  • Step 5
  • puree roasted chile mixture in a food processor gently until it is chunky. set aside.
  • Step 6
  • add remaining 1 onion to medium pot with a tablespoon of broth and caramelize the onion. About 15 minutes. add broth and bring to simmer. add chicken and take off heat. serve over long grain white or brown rice.
