  • 4 oz (about 2 cups) spinach
  • 1/2 cup fresh cilantro, chopped
  • 3 cup water
  • 3/4 cup vegetable oil (I use canola)
  • 2 1/2 cup long grain white rice
  • 1 tsp salt (you can also use sea salt)
  • 3/4 cup corn kernels
  • 1 garlic clove (or 1/4 teaspoon minced garlic)
  • 1 cup thinly cut spinach
  • 1 hot chili pepper, fresh with the stem removed

How to Make Green Rice

If you have prepared the ingredients needed, now time to start cooking. There are 10 steps you must follow to make Green Rice in your home by yourself.

    Step 1
  • In a blender, combine the 2 cups spinach, cilantro, garlic and chili pepper.
  • Step 2
  • Blend until smooth.
  • Step 3
  • Set aside.
  • Step 4
  • In a medium sized skillet over medium heat, heat the oil.
  • Step 5
  • Add the rice and cook, stirring constantly, until lightly golden, about 5 minutes.
  • Step 6
  • Add the vegetable mix, water, salt and corn and bring to a boil.
  • Step 7
  • Cook for 5 minutes.
  • Step 8
  • Lower the heat and simmer, covered, until the liquid is absorbed, about 15 minutes.
  • Step 9
  • Add the 1 cup cut up spinach before serving.
