  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 3/4 cup 1% milk
  • 1/4 cup canola oil
  • 2 tsp vanilla extract
  • 6 oz fresh baby spinach
  • 1/2 cup mashed banana
  • optional:
  • 1 green sugar sprinkles or whatever color you choose.

  • Preheat oven to 350°F

  • Weigh out spinach, remove bad pieces. U can use leaves, stems and all!

  • Lay spinach out on a large clean towel. Wrap and pat dry as much as possible. Leave wrapped and set aside until ready to use.

  • Spray 6 jumbo muffin cups with baking spray.

  • In a large bowl wisk together all dry ingredients except spinach.

  • In a blender.. place milk,oil and vailla.

  • Unwrap spinach and place into blender. Leaves, stems and all!

  • Blend on high for 30 seconds to one minute or until spinach is completely pureed.
  • Step 10
  • Add mashed banana and "pulse" the blender to incorporate the banana but don't completely puree the banana.
  • Step 11
  • Pour wet spinach mix into the dry flour mix.
  • Step 12
  • Stir until just incorporated. Do not overmix!
  • Step 13
  • Evenly Fill muffin cups until almost full.
  • Step 14
  • Sprinkle green sugar sprinkles on top of muffin batter in the cups. (This is optional, its mostly for color contrast and look)
  • Step 15
  • Bake 25 to 30 minutes or until toothpick comes out clean.
  • Step 16
  • Let stand 5 minutes then transfer to wire rack for cooling.
  • Step 17
  • Serve warm or cool with or without butter.

  • Step 20
  • For a sweeter muffin use fully ripened banana. For mine I used green unripened banana and was still fantastic. Though its harder to mash and doesn't create enough liquid so if using green banana add an extra 1/4 cup.

  • For even healthier muffins.. sub whole wheat flour in same amount.
