  • 1 Eggplant (medium size)
  • Sauce (spread/dip)
  • 3/4 cup Greek yogurt
  • 1 bunch Green onions (finely diced)
  • 2 tbsp Mayonnaise
  • 2 clove Garlic (crushed)
  • 1 tsp Lemon juice
  • 1/2 tsp Salt
  • 1/2 tsp Black pepper.

How to Make Grilled Greek Eggplant Spread/Dip

If you have prepared the ingredients needed, now time to start cooking. There are 4 steps you must follow to make Grilled Greek Eggplant Spread/Dip in your home by yourself.

    Step 1
  • Cook eggplant on grill using Direct Heat. Took about 5 minutes per side, rotating to all four sides about 20 minutes in total. The exterior should be black and chard. Remove from grill and let cool 20 to 30 minutes.
  • Step 2
  • Mix sauce ingredients and set aside.
  • Step 3
  • When cool cut eggplant in half. Scoop out the interior onto a cutting board and find dices. Transfer to a large bowl and work with potato masher breaking it up even more. (you can use a food processor just be careful not to over process it. There should be a few small chucks left in for texture)
  • Step 4
  • Add sauce and mix well. Serve with crackers or toasted baguette.
