  • 2 medium zucchini
  • 1/4 lb very thin sliced deli pepperoni
  • 20 or more grape tomatoes
  • 10 wooden skewers, soaked in water 1 hour to prevent burning
  • 3 tbsp olive oil
  • 1 tbsp seasoned rice vinegar
  • 1/4 tsp granulated garlic
  • 1/4 tsp black pepper and salt to taste
  • 2 tbsp romano cheese, grated
  • 1/4 tsp Italian seasoning

How to Make Grilled Zucchini Ribbons

If you have prepared the ingredients needed, now time to start cooking. There are 6 steps you must follow to make Grilled Zucchini Ribbons in your home by yourself.

    Step 1
  • Combine olive oil, rice vinegar, garlic, pepper salt, Italian seasoning and romano cheese in a small bowl, set aside
  • Step 2
  • Make ribbon length slices of zucchini with a vegetable peeler
  • Step 3
  • Place pieces of pepperoni on one side of zucchini ribbon to cover
  • Step 4
  • Thread on skewers as shown below with 2 tomatoes to each skwer. Brush threaded skewers with olive oil mixture
  • Step 5
  • Place on preheated grill over direct heat turning to cook all sides about 5 minutes
  • Step 6
  • Serve as a side dish to almost any meal. They also make great appetizers!
