  • 30 g Harusame noodles (Japanese vermicelli)
  • 1/2 cucumber (slice thinly, sprinkle salt on it, leave for 5 mins, wash with water, drain well.)
  • 1/3 carrot (cut into thin strips, boil lightly or use a microwave)
  • 10-20 g broccoli (blanch in salted water, let it cool)
  • 3-4 slices ham (tear into bite sized pieces)
  • salt and pepper
  • white sesame for topping (optional)
  • MARINADE: (mix in advance)
  • 2 Tbsp vinegar
  • 1 1/2 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • 1 tsp sugar
  • 1 tsp ginger, squeeze the juice out

  • Bring the water to a boil, put the noodles and cook according to the directions on the package. Drain and rinse with cold running water, cut about 10 cm long.
