  • 1 packages elbow macaroni
  • 1 cup mayonnaise
  • 1 tbsp onion, finely minced
  • 2 tbsp celery, finley minced
  • 1 small carrot, finley minced
  • salt and pepper
  • 1/4 cup thawed frozen peas (optional)

    Step 1
  • Cook macaroni according to package instructions.  You want the macaroni cooked but not soggy.
  • Step 2
  • Rinse cooked macaroni with cold water, drain and put aside in refrigerator until completely cooled.

  • Mince onions, carrots and celery until extremely fine.  you can use a food processor or a hand grater.
  • Step 4
  • Once macaroni is completely cool (cold is best), add mayonnaise, salt, pepper and onion, celery, carrots, peas and mix well.

  • Step 6
  • Before serving, add additional mayonnaise if necessary.
