  • 240 grams Bread (strong) flour
  • 60 grams Cake flour
  • 15 grams Sugar
  • 5 grams Salt
  • 6 grams Dry yeast
  • 195 ml Water
  • 20 grams Shortening or margarine

    Step 1
  • Using all the ingredients, knead into dough either by hand or using a bread machine and allow it to rise.
  • Step 2
  • Punch down to remove the trapped air, and divide the dough into 8 portions. Roll the dough into balls making sure that the surface is smooth and tight. Let it rest for 20 minutes. Cover the dough with a damp cloth so the surface does not dry out.

  • Once the dough resembles the shapes in the photo, allow it to rise again in a warm place (20 minutes). If air bubbles are formed at the edge of the dough, pinch the air out by pressing with your fingers.
  • Step 5
  • Once the dough rises up to be fluffy like the ones shown here, bake 15 minutes in a 180℃ oven
  • Step 6
  • I put in my child’s favorite dish, tonkatsu with sauce and mayonnaise in the bun.
