  • 1/4 tsp salt

  • Melt butter in double boiler
  • Step 2
  • add lemon juice and egg yolks
  • Step 3
  • stir constantly in the double boiler, till smooth and thick

  • do not boil

  • remove from heat
  • Step 6
  • if salted butter is used, salt can be omitted
