  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/4 cup sugar
  • 1/4 tsp nutmeg
  • 6 large egg yolks
  • 1/2 vanilla bean
  • 3 oz bittersweet chocolate, chopped
  • 1 whipped cream for topping (if desired )
  • 1 nutmeg for garnish ( if desired )

    Step 1
  • In a small saucepan, combine the milk, cream, sugar and nutmeg.
  • Step 2
  • Split the vanilla bean lengthwise and scrape the seeds into the milk mixture.

  • Add the vanilla pod to the milk mixture and bring to a simmer over medium low heat.
  • Step 4
  • Remove from the heat and set aside to steep for about 20 minutes.

  • Return to a simmer over medium heat.

  • After the mixture is hot, remove a small amount, whisk into egg yolks, then return the egg yolk mixture to the milk mixture.
  • Step 7
  • Cook, stirring constantly, until slightly thickened, about 5 minutes.

  • Remove from the heat, add the chocolate, and let sit for a few seconds, until the chocolate melts.
  • Step 9
  • Whisk to combine, then pour into mugs through a fine mesh sieve.
  • Step 10
  • Top with whipped cream and nutmeg if desired.
  • Step 11
  • Serve immediately.
