  • cheese sauce
  • 3/4 cup Raw cashews
  • 1/2 cup Quick oats
  • 1 cup Raw sunflower seeds
  • 1 cup Nutritional yeast
  • 2 tbsp Corn starch
  • 2 tsp Dry mustard
  • 1 1/2 tsp Garlic powder
  • 1 1/2 tsp Onion powder
  • 2 tsp Sea salt
  • 1 tsp Paprika
  • 1 Fresh ground pepper
  • pasta
  • 1 1/2 cup Rotini pasta
  • 5 large Cremini mushrooms
  • 2/3 cup Steamed sweet peas
  • 1 cup Cheese sauce
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1 1/2 tbsp Earth balance

How to Make Hugo's Vegan Mac and Cheese

If you have prepared the ingredients needed, now time to start cooking. There are 5 steps you must follow to make Hugo's Vegan Mac and Cheese in your home by yourself.

    Step 1
  • In a food processor, place cashews, oats and sunflower seeds and process until mixture is finely ground. Add the rest of the ingredients to the nut/seed mixture until well combined.
  • Step 2
  • In a saucepan over medium heat, whisk together 2 parts dry mix with 1 part soy milk or water. Whisk often to avoid clumps.
  • Step 3
  • Boil pasta al dente. Drain but don't rinse. Mix in 1 tbsp earth balance
  • Step 4
  • Slice mushrooms and sauté with 1/2 tbsp margarine, garlic powder, paprika and salt and pepper. Add mushrooms and sweet peas to the cooked pasta and mix together.
  • Step 5
  • Bake for 25-30 minutes at 350°F. Top with fried onions.
