  • 3 tbsp each Sugar, sake, mirin, soy sauce
  • 1/2 tsp Hon-Dashi dashi stock powder

    Step 1
  • In a frying pan, combine all of the ingredients except the fish. Bring to a boil, then add the fish of your choice. When it comes to a boil, cover with a small lid that fits right on top of the fish (a drop lid or otoshi-buta) and simmer for 7-9 minutes and it's ready.
  • Step 2
  • The heat is about this strong. It's almost on high heat. Go as high as you can without making it boil over.
  • Step 3
  • As shown on the photo, make a hole in the center of an aluminum foil to release the steam and simmer. Do not touch the fish.
  • Step 4
  • After about 8 minutes, the sauce has boiled down to 1/3 and it's ready! It's very quick! Make sure you don't simmer for too long!
