Ingredients: Indian Rice Pudding

  • 2 cup Basmati or other long grain white rice
  • 3 cup Whole milk (4%)
  • 1 can Coconut milk (13.5 ounces)
  • 1/2 cup Sugar
  • 2 tsp Ground cardamom
  • 1 cup Golden raisins
  • 1 cup Chopped pistachios or almonds

How to Make Indian Rice Pudding

If you have prepared the ingredients needed, now time to start cooking. There are 8 steps you must follow to make Indian Rice Pudding in your home by yourself.

    Step 1
  • Cook the rice with 3.5 cups water. Set aside.
  • Step 2
  • In a large nonstick pan, heat the rice and milk until boiling.
  • Step 3
  • Reduce to a simmer and stir until slightly thickened, about 5 minutes.
  • Step 4
  • Add in all remaining ingredients except the raisins and nuts.
  • Step 5
  • Stir continuously while cooking another 5-10 minutes until slightly thickened.
  • Step 6
  • Remove from heat. Add the raisins and nuts.
  • Step 7
  • Transfer pudding to a serving dish. Cover with plastic wrap directly on the surface of the pudding. This will prevent a "skin" from forming.
  • Step 8
  • Serve at room temperature or chilled.
